The marriage was officiated by Adam Clayton Powell Jr. and joined Carroll with record producer Monte Kay. Unfortunately, their marriage ended in 1962. Carroll gave birth to her daughter, Suzanne Kay, on September 9, 1960, who later pursued a career as a journalist and screenwriter.

In 1959, Carroll engaged in a nine-year affair with actor Sidney Poitier, despite his marital status. In her autobiography, Carroll revealed that Poitier convinced her to divorce her husband, promising to leave his wife for her.

However, Poitier did not fulfil his promise after Carroll proceeded with the divorce. Eventually, he divorced his wife, but their relationship came to an end because Poitier wanted to live with Carroll without her daughter presents for a period of six months before committing to another marriage. Carroll dated and was engaged to British television host and producer David Frost from 1970 to 1973. Surprising the press, she married Fred Glusman, the owner of a Las Vegas boutique, in February 1973. Cancer was attributed to her cause of death, and she was also dealing with dementia at the time. However, Marc Copage, an actor who portrayed her character's son on the television series Julia, stated that Carroll did not exhibit significant signs of cognitive decline as recently as 2017.
